The dishwasher decision usually becomes urgent when service starts borrowing clean plates from the next table setting. The machine may be running continuously, yet the real restriction could be scraping space, mixed racks or nowhere to unload.
This comparison helps Australian cafés, restaurants, pubs and clubs choose between two common commercial formats. For the wider equipment brief, read our commercial dishwasher buying guide, then compare the dishwasher and glasswasher range.
What is the difference between undercounter and pass-through dishwashers?
An undercounter machine normally loads and unloads through a front-opening door. A pass-through, or hood-type, machine can work between compatible loading and unloading tables, allowing racks to move through the wash station. The surrounding layout determines whether that movement is useful.
| Decision | Undercounter | Pass-through |
|---|---|---|
| Loading | Front access; allow room for the open door and operator. | A rack route through the machine; confirm straight or corner configuration. |
| Working space | A compact machine still needs dirty and clean landing areas. | Include inlet and outlet tables, pre-rinse, rack storage and hood clearance. |
| Service pattern | Worth considering where realistic rack demand fits the complete process. | Worth considering where sustained rack handling benefits from a dedicated wash line. |
| Site brief | Check power, water, drainage, treatment and ventilation for the exact model. | Check the same services together with table interfaces and heat or steam management. |
Neither format is automatically the right answer for a venue size. A small restaurant with concentrated plate returns can have a demanding peak; a larger venue may separate bar glasswashing from kitchen crockery. Describe what returns, where and when before choosing a format.

How do you size the busiest wash-up period?
Count plates, bowls, cups, cutlery, glassware and kitchen items over the busiest realistic return window. Use your actual rack arrangement, including the space taken by large plates or unusual shapes. Record whether items arrive steadily or together after a function or a table turn.
For example, 144 plates at an assumed 18 plates per rack create eight plate racks. Another six racks of cups and other items bring that example to fourteen racks. If they return over half an hour, the station must deal with fourteen racks in that half-hour window. The loading assumptions are illustrative; test them using your own crockery.
A theoretical racks-per-hour figure describes specified machine conditions. Staff still need to scrape, sort, load, unload and move clean items. Add recovery and interruptions to the assessment. There is no universal cover-count threshold that makes every undercounter machine too small or every pass-through machine appropriate.
Will a pass-through machine improve the whole wash station?
Walk the route from dirty return to clean storage. Mark the waste point, pre-rinse position, loading area, machine, unloading area and rack store. Check where staff stand and whether other kitchen traffic crosses the route. A rack should have somewhere useful to go at each stage.
For an undercounter option, measure the open door and allow a landing point within practical reach. For a pass-through option, confirm compatible table dimensions and the selected loading direction before ordering stainless steel. Allow the hood to open fully and retain service access.
Consider the stainless steel furniture range or custom fabrication as part of the station. Reusing an existing bench is sensible only when its connection, height and layout suit the chosen machine.
Which current models illustrate the two formats?
The MEIKO UPster U 500 is an undercounter example. The MEIKO UPster H 500 and Winterhalter Workhorse PT-M illustrate pass-through options in the ICE Group range. These are starting points for a brief, rather than interchangeable specifications.
Ask for the exact Australian technical sheet, rack suitability, usable entry height and supplied accessories for each quoted version. Model suffixes and configurations matter. Compare the features needed for your washware and services before comparing purchase prices.

What belongs in the installed-cost comparison?
Request a quote that identifies delivery, placement, benches, installation, commissioning, water treatment and any site changes. Confirm voltage, phase, circuit, water supply, drainage and ventilation with the selected model and the relevant trades. Do not assume a drain pump, heat-recovery option or a particular electrical connection is standard across a range.
Compare water and chemical consumption on the same basis, noting whether figures refer to a cycle or a rack. Include cleaning, servicing and the practical time spent handling each rack. Nameplate power is not a daily electricity-consumption figure. Use comparable operating data if exploring electricity costs with the Equipment Energy Calculator.
Finish the shortlist with a clear brief: peak rack demand, largest wash item, station drawing, existing services, access photographs and preferred installation timing. That gives the equipment discussion something more useful than a machine width alone.
Common buying questions
Is pass-through always faster?
It can support an efficient rack route, but useful throughput depends on the selected programme, recovery, staffing and the loading and unloading process. Compare the whole station.
Can a dishwasher also wash bar glasses?
Check the intended applications, compatible racks, programmes and treatment requirements. A separate glasswasher may help when bar returns and finish requirements need their own station.
Should I replace my current machine with the same format?
Record what works and what causes delays first. A replacement can retain the same format if the process still suits, or become an opportunity to improve the surrounding station.
